Special red curry paste yummy and spicy

Ingredients

  • Dried big chili 250 g
  • Green hot chili 50 g
  • Shallot, coarsely sliced 100 g
  • Garlic, coarsely sliced 100 g
  • Lemon grass, finely sliced 50 g
  • Galanga, finely sliced 30 g
  • Coriander root, finely chopped 1 root
  • Kaffir lime rind, finely sliced 20 g
  • Pepper 20 g
  • Coriander seed, roasted 10 g
  • Cumin, roasted 10 g
  • Shrimp paste 10 g
  • Pinch of salt

Instructions

  1. Soak dried chili in water for minutes and squeezedry.
  2. Put all ingredients in mortar or blender, grind until finely blended.
